Pricing is based on carcass (hanging) weight, not the weight of meat you take home. After processing, trimming, and bone removal, you will receive a portion of the carcass weight back in usable meat. A whole carcass yields approximately 52% of its hanging weight in meat; a half yields approximately 27%; a quarter yields approximately 15%. Weight ranges are estimates — your final carcass weight and total will be confirmed by Golla Meats before your order is finalized.
